Ok ladies… here comes a delicious go to breakfast dish.
When I think of Whole30 or Paleo Breakfast options, I
usually think of some egg casserole with sausage and veggies thrown into it.
Although those can be AMAZING, making them week after week gets a little boring…
So, let’s switch it up.
I shared the image above on Instagram and
so many people were asking for specifics. Well let’s break it down already!!!
[ Lish’s Favorite Breakfast Bowl RECIPE ]
Serves 1
Whole30 and Paleo approved
Ingredients
½ ripe banana
1 egg
½ t vanilla extract
½ green apple, sliced
1-2 T nut butter (unsweetened)
I love Georgia
Grinders because they have the simplest ingredients and are the creamiest
nut butters I’ve found. Specifically, almond or cashew works well with this
recipe.
1-2 T shaved unsweetened coconut flakes, toasted
1 t cinnamon
Coconut oil, for cooking
Optional: Sprinkle flax seeds and/or chia seeds on top
Optional: Sprinkle flax seeds and/or chia seeds on top
Instructions
// Warm up your skillet on medium
heat and throw the coconut on there. Don’t walk away from the skillet because
it can burn quickly. Watch the coconut until it has a slight hint of the golden
toasted look. Once toasted, remove to cool.
// Grab a fork and mash the banana
with the egg in a small bowl. Add the vanilla extract. Don’t worry, its normal
to have a lumpy batter!
// Use the coconut oil to grease a
skillet on medium heat. Add the batter and with a spatula, mash up your mixture
till it is cooked through.
// Once cooked, remove from the
skillet and place into a bowl. Now we add all the good stuff on top like your
apple slices, nut butter, coconut flakes, and sprinkle everything with cinnamon.
