[Simple Everyday Egg Salad with Celery Sticks]

Ingredients
1/3 C red onion, finely chopped
6 celery stalk, 1 finely chopped for egg salad mixture, 5 halved
2 green onions, chopped
1/3 C mayo (I like Primal Kitchen’s Mayo with Avocado Oil found at Whole Foods)
2 t Dijon mustard
1/4 t smoked paprika
Salt and pepper freshly ground, to taste
Instructions
Place
your eggs in a saucepan and add enough cold water to cover them by an inch.
Bring the water to a boil and then remove the pot from heat and cover. Let it
sit for 20 minutes and then place the eggs under running cold water. Peel eggs
and rinse them.
Finely dice the eggs. If you don’t have a tool for this, egg slicers are so cheap. You can grab one at any Bed Bath & Beyond or even Amazon. I live by these for any egg salad recipe cause I like the egg chopped very small.
Place chopped eggs in a medium mixing bowl and add all remaining ingredients.
Will last up to 1 week in the refrigerator.
